Edamame Salad
This recipe is courtesy of a client of mine, Ms. Ann Orgel! Ann has the most amazing original ideas for snacks and meals and she was generous enough to share some of her booty. I am hoping that she will continue to do so.
What you need: serves 4, about 250 calories
12oz. frozen shelled edamame - cooked 5 minutes and drained
¼ cup raw sliced almonds
1/3 cup dried cranberries
½ tbs olive oil
½ cup cooked wheat berries
½ cup corn
2 tbs chopped red onion
1 tbs fig vinegar
Fresh cilantro to taste
You may also add grapes and avocados in moderation
